Learning how to cook rice is like riding a bike. Once you know how to make rice that’s perfectly fluffy every time, you easily repeat the process over and over and wonder how your rice ever turned out any differently. Rice—whether white, or brown, or any other kind you prefer—is a staple in countless dishes, so knowing how to make it yourself is a pretty important skill.

Instructions make cooking rice look so simple, but everyone I know has burned rice at least once (or, in my mom’s case, every time.) To master the cooking feat once and for all and make sure your water-to-rice ratio is always on point, follow our simple steps below and you’ll never wonder how to cook rice on the stove again.

Here is what you’ll need!

Rice Pilaf
Servings: 4

INGREDIENTS
1 tablespoon olive oil
1 shallot, finely chopped
1 cup white long grain rice
3 tablespoons white wine
1¾ cups chicken stock
Pinch of salt

PREPARATION
In a small pot over high heat, add the olive oil.
Once the oil begins to shimmer, add the shallot, and cook until it begins to brown, stirring occasionally.
Add the rice and stir to fully coat with oil and shallots. Add the wine and stir to combine.
Add the chicken stock and salt and bring to a boil.
Once boiling, put a lid on the pot and reduce the heat to simmer. Cook for 18 minutes.
Remove the pot from the heat and let steam for 10 minutes.
Enjoy!

Short-Grain White Rice
Servings: 4

INGREDIENTS
1 cup short-grain white rice
1¼ cups water
Pinch of salt

PREPARATION
In a small pot, add the rice, water, and salt, and bring to a boil over high heat.
Add the lid to the pot and turn the heat to a simmer.
Cook for 15 minutes.
Remove from the heat and let steam with the lid on for 10 minutes.
Enjoy!

Rice is part of many different cuisines around the world; Chinese people have been eating rice for thousands of years and rice plays an important role in Chinese culture. But it is not just the act of serving rice that is a tradition in many societies—it is also how it is prepared, ensuring that the rice is not mushy, sticky, or watery.

Although many Chinese families now use a rice cooker to prepare rice, it is easy to get perfect, fluffy rice by cooking it on the stove. (If you only cook rice one in a while, cooking on a stove would be most efficient but if you eat rice often then you may want to purchase a rice cooker.)

To make the perfect rice, you will need long-grain rice, water, and a pot with a lid. It is also handy to have a colander and bowl for rinsing the rice. This recipe does not include any seasoning, like salt, but feel free to add a bit (maybe 1/4 teaspoon per 1 cup of rice) when combining the rice and water.
