pinch of salt
1 cup granulated sugar (or more if you like your curd sweeter)

Recipe in metric (yields about 360g of lemon curd):
5 egg yolks
5 small lemons (yields about 120g of lemon juice)
pinch of salt
250g granulated sugar (or more if you like your curd sweeter)
120g butter at room temperature
